Can we take a min all the airplane cookies I missed out on due to the lack of traveling last year? And yes I said “airplane cookies”, you know those sweet coffee cookies. Well fun fact for those who didn’t know A. they are called Biscoff cookies and B. they are completely vegan and can be found in your local grocery store.
So, I thought, now that I am back to catching regular flights let us make a dessert using one of my favorite cookies for the perfect preparation for the many red-eye flights to come. Today I have a new breakfast, brunch, and party favorite Vegan Biscoff Donuts! These donuts are dairy and gluten-free and take less than 30 mins to prepare so be sure to add this recipe to your next family morning breakfast!
Ingredients:
- Biscoff Spread
- Biscoff Cookies
- Gluten-Free Flour
- ACV
- Baking Powder
- Salt
- Dairy-Free Milk
- Vegan Butter
- Brown Sugar
- Egg Alternative
- Vanilla Extract

Vegan Biscoff Donuts

Ingredients
- 1 cup Gluten-Free Flour
- 1 tsp Baking Powder
- ½ cup) Brown Sugar
- ½ tsp Salt
- ½ cup Dairy-Free Milk unsweetened
- 1 tbsp Apple Cider Vinegar
- ¼ cup Vegan Butter melted
- 3 tbsp Egg Alternative
- 3 tbsp Biscoff Spread room temperature
Donut Glaze
- ¼ cup Biscoff Spread
- ¼ cup Dairy-Free Milk
- 1 cup Confectioners Sugar Icing Sugar
- 15 Biscoff Cookies
Instructions
- Combine milk and vinegar and set in the refrigerator, to form dairy-free buttermilk and preheat oven to 355°
- In a mixing bowl whisk together dry ingredients (flour, baking powder, salt, brown sugar)
- Next, remove buttermilk from the refrigerator, and in the same bowl add in wet ingredients (buttermilk, melted butter, egg alternative, and vanilla) whisk until combined
- Once donut dough is finished, scoop dough into a large freezer or piping bag
- Begin piping dough into a greased donut pan filling each donut-round halfway and bake in the oven for 15-18mins until fully baked
- While donuts are baking begin making donut glaze whisking together powder sugar, milk, and Biscoff spread into an icing like consistency
- Removed donuts from pan and place on a baking rack to cool
- While donuts are cooling crumble 5 Biscoff cookies and set crumbs aside
- Begin to dress donuts by coating each donut with Biscoff icing glaze and top with cookie crumbles and a Biscoff cookie and serve
