Vegan Chocolate Chip Waffles

Ingredients
  

  • 2 cups Gluten-Free Flour all-purpose
  • 1 tbsp 100% Cocoa Powder dairy-free
  • ¼ cup Granulated Sugar organic
  • 2 tbsp Arrowroot Powder
  • ½ tsp Salt
  • cup Plant-milk
  • 2 tbsp Beet Juice
  • 1 tsp Vanilla Extract
  • cup Oil vegetable
  • cup Water
Glaze
  • 3 tbsp Vegan Butter melted
  • 1 cup Confectioner Sugar
  • 1 tsp Vanilla Extract
  • ¼ cup Plant Milk

Equipment

  • Waffle Maker
  • Large Mixing Bowl
  • Medium Mixing Bowl
  • Small Mixing Bowl
  • Whisk
  • Cooking Oil Spray
  • Sifter
  • Measuring Cups & Spoons

Method
 

  1. In a medium mixing bowl whisk together dry ingredients (flour, cocoa, sugar, arrowroot, salt)
  2. Using a large mixing bowl mix wet ingredients (milk, beet juice, vanilla, oil, water)
  3. Once wet and dry ingredients are mixed being to sift dry ingredients into the large bowl and whisk until a batter consistency is formed
  4. Begin to preheat the waffle maker
  5. While the waffle maker is preheating begin to mix in vegan chocolate chips into the batter
  6. Once waffle maker is heated, spray with cooking oil and scoop about ¼ cup of batter into waffle maker (portions may vary depending on waffle maker) allow to cook for 2-3mins for the waffle to form
  7. Repeat step #6 until all batter is cooked
  8. Once all waffles are prepared set aside and prepare the glaze by whisking together melted butter, confectioner sugar, vanilla, and milk
  9. Plate waffles and top with glaze, chocolate chips, and confectioner sugar and serve
