Chicken Salad

Even though for the longest I thought salads were boring and tasteless mostly because they tasted healthy (lol), there was always one salad that never disappointed and I grew up continuing to eat which was Chicken Salad. This is quite surprising since as a child I never liked different foods to touch or be mixed together nor did I like similar entrees like potato salad… that’s a discussion for another day. But, there was always something about chicken salad whether it was toping buttery crackers or a flakey croissant, which makes having chicken salad in the summer (yes, with grapes and nuts!) has always been a pleasing classic for me.

As you may know by now being on this top 8 free journey things like mayo and nuts had to be dropped by the waste side however don’t fret this is nothing a few tweaks can’t fix and still provide those great flavors. So I will be sharing how I make my top 8 free chicken salads perfect for the summer! Your next summer tea bunch guests will not notice the lack of dairy and nuts!

Ingredients:

  • Chicken Breast
  • Grapes
  • Celery
  • Red Onion
  • Dill
  • Vegan Mayo
  • Dijon Mustard
  • Salt & Pepper

Materials

  • Kitchen Knife
  • Measuring Cups & Spoons
  • Mixing bowl
  • Serving Spoons
In a medium-size boiling pot, boil chicken breasts in seasoned water until fully cooked. After cooking chicken, place the breasts in a medium container and begin to shred. Then, place shredded chicken into the refrigerator and allow to chill while preparing your vegetables.
Using a cutting board and kitchen knife begin chopping your cleaned grapes, celery, and onion and set aside in the refrigerator to chill
Once the chicken is properly cooled, in a large serving bowl prepare salad by tossing chicken, grapes, celery, red onion, mayo, mustard, dill, and salt & pepper using your serving spoons
Now that chicken salad is combined place salad into the refrigerator to chill and serve

  • 2 large Chicken Breast
  • 2 cups Green Grapes chopped
  • ¾ cup Vegan Mayo
  • 2 tbsp Fresh Dill
  • 1 cup Celery chopped
  • ½ cup Red Onion finely chopped
  • ¼ cup Dijon Mustard

Instructions
 

  • In a medium-size boiling pot, boil chicken breasts in seasoned water until fully cooked
